  • Savoring Basque cuisine in St. Jean de Luz
  • Walking the ramparts of Carcassonne
  • Learning how to hunt for truffles in Perigord

Day 1 Depart USA

You board your overnight flight to France to begin your exploration of the Basque Coast and the Perigord

Day 2 Arrival in Biarritz

Upon arrival in Biarritz you are met by your guide and taken on an orientation tour of the town, a haven for the wealthy over the past two centuries. You then proceed to the equally chic resort town of St. Jean de Luz sitting on the French side of the border in Basque Country. The Basques are a separate culture with their own language and cooking styles. They reside on both the French and Spanish side of the border. Your hotel is a Belle Epoque edifice maintained at five star standards and situated facing the Atlantic Ocean. You have the rest of the day to relax before dining in the hotel's dining room.

Day 3 Bilbao and San Sebastian

After breakfast you meet your guide and head across the border into Spain. You are headed to the port city of Bilbao with an ancient heritage and a modern art museum. The Guggenheim not only houses art but is a piece of art in its own right. You have the opportunity to view it from the outside and then the works of art inside. You have a Basque lunch in Bilbao before heading to the charming resort town of San Sebastian where you have a tour and some free time to enjoy the water views. You then head back into France

Day 4 Enjoying St. Jean De Luz

We have left this day open for you to enjoy this resort town on your own. You can try the Thalasso Spa at the hotel, take a stroll along the beach or visit the nearby shops. In the evening we have set up dinner at a charming local restaurant.

Day 5 A Visit to Lourdes

After breakfast you will leave St. Jean de Luz headed for the town of Carcassone and its magnificent fortress. First, however you will stop in Lourdes, one of France's biggest attractions. In 1858, a peasant girl, Bernadette Soubirous, was gathering wood with her siblings when she indicated that she saw what was the first of eighteen apparitions of the Virgin Mary. When word of this spread, pilgrims started to come to the cave to drink from the spring in hopes of a miracle. Over time a huge Basilica was built at the site and today the town gets five million visitors and is second only to Paris in the number of hotels. You will have a chance to visit the basilica and then leave the town for the quiet nearby village of Argeles-Gazost with its quaint streets lined with boutiqyues and cafes. You have lunch in the village and a chance to browse before heading to Carcassone.

Day 6 Exploring Carcassone

The town of Carcassone is dominated by its impregnable fortress which has stood since the Middle Ages and is now a Unesco world heitage site. There are two walls around the interior each two miles long and supported by fifty six watchtowers. You will have a chance to walk the ramparts and the view that they offer before exploring other parts of the castle. You will also have the opportunity to ride on a " peniche" on the canal du midi which was created to join the Atlantic and the Mediterranean. After the visit to Carcassone you return to your hotel

Day 7 Toulouse and Bergerac

Today you will be heading West to the Perigord region but first you will stop for a visit to the city of Tououse which is the fourth largest in France. Known as "La Ville en Rose" or City in Pink, this charming university town has a Medterraneqan anbiance and some noted architectural edifices dating back to the Middle Ages. It is also firmly planted in the future however since it is the center of the French aerospace industry where the Concorde was built as well as the current Airbus products. After your visit you continue to the Bergerac region which, while not as well known as nearby Bordeaux is justly famous for its wines and home to "Cyrano". You will stop for lunch along the way and visit one or two vineyards to sample the product. You then arrive in Perigord and your charming hotel.

Day 8 Iconic Foods of Perigord

If there is anything that defines French haute cuisine it is Foie Gras and the Black Truffle. As it happens, both are found in Perigord and close to your hotel. After breakfast you will join your guide and travel to the market town of Lalbenque where you will get an introduction to cavage, the process for searching for traffles using either a dog or pig. These " Black Diamonds" are found near the roots of trees and you will see the technique at work. After the demonstration you proceed to the truffle market in town which is the largest in this part of France. After your visit you head towards Frespech stopping for lunch along the way. In Frespech you visit the Foie Gras Farm Museum to learn the techniques of Foir Gras from both Geese and Ducks. You then return to your hotel

Day 9 The Cuisine of Perigord

In the morning you finish breakfast and then head to the kitchen for hands on instruction in the cuisine of Perigord. Working with the hotel's chef you prepare a multi-course meal which you also enjoy as lunch. The rest of the day is at leisure in preparation for the tasting menu with Bergerac Wine that you will enjoy this evening as you say farewell to Perigord.

Day 10 Return to USA

In the morning your driver is waiting to take you to the airport where you begin your journey back to the USA arriving back later that same afternoon.
